Chicken Binacol

Chicken Binacol is a Filipino chicken soup cooked with coconut water. It is usually served with coconut meat. Traditional Filipinos even use the coconut shells as serving plates for this dish!

Full Recipe

Ingredients:

1 kilo Magnolia Chicken Adobo Cut
2 pcs Large potatoes, quartered
½ cup Tomato, sliced
½ cup Onion, sliced
¾ cup Kamias, sliced
5 pcs peppercorns
2 pcs Buko, reserve juice and scoop buko meat
salt & pepper to taste

Procedure:

Place buko juice in a stock pot. Add chicken, potatoes, tomatoes, onions, kamias, peppercorn and buko meat. Season with salt and pepper. Boil then simmer until chicken is cooked. Maybe served using the coconut shell.
Makes 6-8 servings.
